Description

With its hint of mint and rich chocolate drizzle, elevates the classic Avocado Lime Cheesecake to a new level of sophistication and flavor. Enjoy your culinary creation!

Ingredients

Scale
  • 1 cup almonds
  • 1 cup pecan nuts
  • 10 dates
  • ¾ cup coconut oil, melted and cooled
  • Sea salt
  • 5 avocados
  • ¼ cup lime juice
  • 1 tablespoon lime zest
  • ½ cup raw honey
  • 1 teaspoon vanilla extract
  • A handful of fresh mint leaves
  • 50g dark chocolate (70% cocoa), for drizzling

Instructions

  • Soak the almonds in cool water for about 8 hours. In a separate bowl, soak the pecans for 4 hours. This softens them and enhances their flavor.
  • Drain the almonds and pecans, then transfer them to a food processor. Add the dates, 1/4 cup of coconut oil, and a pinch of sea salt. Blitz until you achieve a crumbly, sticky mixture.
  • Press this nutty base into a 9-inch/22 cm tart pan, ensuring an even layer. Chill in the fridge for about 15 minutes to firm up.
  • For the filling, peel and roughly chop the avocados. In the food processor, combine avocados, lime juice, lime zest, the remaining coconut oil, raw honey, vanilla extract, and a small pinch of sea salt. Add the fresh mint leaves for a refreshing twist. Blend until the mixture is creamy and smooth.
  • Pour this vibrant green filling over the chilled crust, smoothing the top with a spatula. Let the cheesecake set in the refrigerator for at least 60 minutes.
  • Just before serving, melt the dark chocolate and drizzle it over the cheesecake for a luxurious finish. Optionally, garnish with additional lime zest and mint leaves for extra flair.
