Vanilla Custard Keto Ice Cream

Vanilla Custard Keto Ice Cream

April 21, 2022 By Paul

This ice cream recipe comes courtesy of our social media manager. Four egg yolks are mixed over heat with a natural, low-carb sweetener, such as stevia or keto maple syrup. To this is added a cup of full-fat coconut milk and a cup of unsweetened almond or coconut milk, plus vanilla extract and salt. The mixture is placed in the refrigerator to cool before being run through an ice cream machine. Each half cup serving contains 11 grams of fat, 19 grams of fiber, and only half a gram of sugar. Note that coconut is the most ketogenic food around.

Key Takeaways:

  • This ice cream recipe uses four egg yolks, a cup of full fat coconut milk, and another cup of almond or coconut milk.
  • Coconut is the most ketogenic food around, as 15% of its fats quickly turn to ketones.
  • The sweetener can be anything natural and low-carb, such as stevia or xylitol.
