Cashews are expensive, but a lot goes into processing them. They come from cashew trees and aren’t really nuts. They’re actually drupe seeds that grow on the bottom of cashew apples. Once picked and processed, cashews are a good source of protein and are high in fat (both saturated and unsaturated). They also contain many key vitamins and minerals. Research suggests eating cashews can benefit both heart and bone health. In addition, their tryptophan content may slow cognitive decline and function as an antidepressant. But some people suffer from cashew allergies. In terms of sustainability, you can buy organic and fair trade cashews. The. biggest concern is that cashew shells are toxic, so the harvesting process is tough on workers.
