Mexican Corn Fritters With Tomato & Avocado Salsa

Mexican Corn Fritters With Tomato & Avocado Salsa

April 24, 2022 By Paul

Fritters are a great way to add vegetables to the diet, and yellow corn fritters are dense with carotenoids. To make the salsa, mash avocado, onion and lime juice in a bowl, then add chopped tomatoes and coriander leaves, plus some sea salt. For the fritters, remove corn from two cobs. Add it to three lightly beaten eggs along with paprika, thyme, ground coriander, and lime zest. Heat oil in a non-stick frying pan and add the mixture. Cook the fitters for around three minutes per side, then serve them warm with the salsa on top.

Key Takeaways:

  • Corn offers many varieties and colors, which actually offer different health benefits.
  • Yellow corn actually features a plentiful amount of carotenoids, which is an antioxidant.
  • Fixing fritters is a great way to add vegetables to the diet of the picky consumer.

“Fritters are a fabulous way to incorporate more veggies in the diet, particularly with fussy eaters.”
