Description

“Savor the perfect harmony of crispy sourdough, creamy avocado, and smoked salmon, crowned with a luscious poached egg and a sprinkle of furikake for an exquisite breakfast experience.”

Ingredients

Scale
  • 2 pieces of sourdough bread, or your favourite bread variety “toasted”.
  • 1 medium avocado, mashed
  • 4 slices of smoked salmon
  • 2 poached eggs
  • splash of white vinegar
  • 1/2 tablespoon furikake seasoning (or substitutes)

Instructions

  • Spread mashed avocado evenly on top of two pieces of toasted sourdough bread.
  • Lay two pieces of smoked salmon on each piece of toast.
  • Bring a pot of water to boil with a splash of vinegar. Crack the eggs into a ramekin or mini bowl.
  • Once the pot of water is brought to a boil, turn off the heat and slowly add the egg from the bowl into water, leave the lid on for 3 minutes. Remove with slotted spoon and place on top of toasts!
  • Sprinkle furikake seasoning on toasts and serve immediately. If you do not have furikake you might substitute with a mixture of nuts and seeds such as almonds, cashews, walnuts, pumpkin, sunflower, or chia, to add a crunchy texture. Or google “substitutes to furikake”.

Notes

To calculate the preparation and cooking time for this avocado toast with smoked salmon and poached eggs recipe, we’ll go through each step:

  1. Toasting the Bread:
    • Toasting two pieces of sourdough bread: This can vary depending on your toaster, but typically takes about 3 to 5 minutes.
  2. Preparing the Avocado:
    • Mashing the avocado: about 5 minutes (including the time to peel and pit the avocado).
  3. Assembling the Toast:
    • Spreading the mashed avocado on toast and adding smoked salmon: about 5 minutes.
  4. Poaching the Eggs:
    • Bringing a pot of water to boil with vinegar: This can vary depending on the stove and pot size, but typically takes about 5 to 10 minutes.
    • Cracking eggs into a ramekin or bowl: about 2 minutes.
    • Poaching the eggs: 3 minutes per egg. If you poach them one at a time, it’s 6 minutes total; if you can poach both simultaneously, it’s 3 minutes.
  5. Final Assembly:
    • Placing the poached eggs on the toast and sprinkling with seasoning: about 2 minutes.

Total Active Preparation Time: 22-28 minutes (sum of active steps like toasting, mashing, assembling, and poaching).

This recipe involves multiple steps that can be done simultaneously, such as mashing the avocado while the bread is toasting and poaching the eggs. The time might vary slightly based on individual cooking techniques and kitchen equipment.
